Instant Pot Salsa Chicken

I haven't used my Instant Pot in what feels like forever, so, when I was feeling hungry a few days ago, I dug around in my fridge to see what was available. This chicken recipe I did on the spot is SO easy to throw together, and it cooked in 15 minutes! I then cooked quinoa for a minute (with 15 minutes or so to steam while I was working 😂), and some spinach and an egg. So it took less than 30 minutes to make this whole meal and I had so much left over!

The total amount could probably feed 4-5 people depending on how hungry you are and what other toppings you throw on. I could see it being extra delicious with some purple cabbage, corn, etc. Keep scrolling for the recipe!

Instant Pot Salsa Chicken

Ingredients:

  • Chicken thighs (about 4-5 thighs)
  • 1 jar of salsa (I used the Trader Joe's roasted salsa)
  • 1/4 cup chicken broth
  • 1/2 cup quinoa
  • 1 cup water or chicken broth
  • Optional toppings: avocado, shredded cabbage, cooked spinach, egg, roasted corn
  1. Throw your chicken thighs and salsa into your Instant Pot. Now, waste not! Use the chicken broth to swirl around the salsa jar and pick up any leftover sauce, and dump it into the pot with your chicken.
  2. If your chicken isn't frozen, cook for about 15 minutes, and, if it is frozen, cook for a little more (try 20 or more minutes). Set your pot at Manual at this step! When it's done, release the steam vent to release all the pressure.
  3. Put the quinoa and water or broth into a container safe for your Instant Pot. I like this set off of Amazon* which is perfect for PIP (Pot in Pot) cooking! Put a small trivet in the pot just with all the chicken in there and put the pot of quinoa on top.
  4. Once again, use Manual and set it for just 1 minute—crazy, I know. After 1 minute, just let it sit for about 10 minutes minimum so the quinoa is getting steamed. I forgot about it because I was working but after 15 minutes it was still perfect!
  5. After that, release the steam and fluff your quinoa with a fork. Put everything together in a bowl with any toppings you like and enjoy!
