Watermelon Radish, Chive, & Goat Cheese Toast

This toast was inspired by two things: the watermelon radishes I found at the farmers market and these seedless lemons gifted to me. Yes, SEEDLESS LEMONS!

But not needing to hold my hand under the lemon while squeezing to catch any seeds was a game-changer and now I feel like regular lemons are forever ruined for me??

These naturally seedless lemons can be found at Costco. I actually spotted some when we made a trip last month.

And watermelon radishes. I had never seen them in grocery stores so I was super curious when I found a stand at the farmers market in Outer Sunset selling them and just bought a few on a whim. Consider me a radish convert! The flesh is so, so beautiful and definitely lives up to the name. And that vivid pink radish inside is tasty — it’s a little peppery but refreshing and the crunch is super satisfying with each bite.

Feeling inspired by the bright yellow and pink in front of me, I threw together this toast that gives me fresh spring/summer vibes just looking at it. Mixed with creamy goat cheese and fresh chives, it’s definitely something I want to eat again and again.


Watermelon Radish, Chive, & Goat Cheese Toast

Makes 1 serving

Ingredients:

  • ½ of a lemon

  • 1 small watermelon radish

  • 1 tbsp goat cheese

  • 1 tbsp fresh chives, chopped

  • 1 slice of toast

  • Pinch of salt

Instructions:

  1. Wash your radish and thinly slice with a knife or with a mandolin. Depending on how big your radish is, you might not need to use the whole thing, so just slice however many you want to eat!

  2. Toast a slice of bread and then spread the goat cheese on top.

  3. Layer the radish slices on top and squeeze a bit of lemon juice over the top. With a zester or microplane, gently zest the lemon half over the toast.

  4. Top with the freshly chopped chives and a pinch of salt (I used Morton coarse salt).

Optional: edible flowers for an additional fresh vibe — this is totally not necessary but you can also grow edible flowers at home. I have nasturtiums growing in our yard!
