Pumpkin Spice Syrup
Fall is here which means…PUMPKIN SZN HAS ARRIVED 🎃
I know it’s super basic to love pumpkin spice so much, but it really does remind me of East Coast falls which are maybe my favorite time of the year! Although it never gets that cold in SF, having pumpkin spice foods and drinks gives me a little piece of home at home.
That’s how this pumpkin spice syrup came to life. You can drizzle it over waffles, ice cream, etc, and one batch can make so many glasses of pumpkin spice dalgonas! If you’re not feeling a cold drink, just add it to a cup of hot coffee and get the same effect as this dalgona.
I haven’t had dalgona in forever — literally not since last summer when the whole craze was happening. I can’t make a legitimate pumpkin spice latte at home since I don’t have an espresso machine (or a Nespresso), but I felt like pumpkin spice + dalgona would be the closest I’d get since there’s coffee in it. Not to mention it’s super Instagrammable 😂
Pumpkin Spice Syrup*
Makes ~½ cup of syrup
Ingredients:
⅓ cup + 1 tbsp of pumpkin puree
1½ tsp pumpkin pie spice
¾ granulated sugar
1 cup water
Instructions:
Put all of the ingredients in a small pot over high heat. Mix well and bring to a boil before lowering the heat.
Keep cooking over medium heat until the mixture has thickened up, about 10-12 minutes.
Pour syrup into a jar and chill in the fridge for a few hours or overnight.
*You’ll want to make your syrup in advance at least a few hours or a day before because you want it to be chilled
Pumpkin Spice Dalgona
Makes 1-2 servings
Ingredients:
Basic dalgona whip (use my recipe here)
½ cup ice
1 cup milk of your choice
2 tbsp pumpkin spice syrup (recipe below)
Instructions:
Make your dalgona whip and set aside.
In a glass, put your ice, syrup, and milk.
Carefully pour the dalgona whip on top and then enjoy!
