Simple Tomato Ricotta Toast
This simple snack only has a few main ingredients, is quick to put together, and makes me so, so happy. It’s even better when you’re eating with fresh tomatoes!
I also feel like I never eat fresh oregano? I’ve only used dried oregano in practically everything I’ve made, but the fresh kind is so flavorful and really took this toast to the next level.
P.S. A really good olive oil can make or break a dish. I’ve loved McEvoy Ranch’s olive oil but also like California Olive Ranch which you can find at Whole Foods and most other grocery stores!
Twist! Add another layer of flavor to your toast with infused oils. I love making garlic confit (and other things) with the Costco bag of peeled garlic we always get. Just put garlic cloves and olive oil in a sauce pot over low heat and cook until the garlic turns golden brown and there's a fragrant garlic smell in your kitchen. You’ll see little bubbles in the oil but it should not be boiling!
Transfer the garlic and oil to a jar after it has cooled down and then store in your fridge. The garlic is basically like roasted garlic so super mellow, and then the oil can be used for really anything!
Simple Tomato Ricotta Toast
Makes 1 serving
Ingredients:
1 slice of bread of your choice
2 slices of tomato
1-2 tbsp ricotta (depending on size of toast)
½ tsp fresh oregano (or the amount you get pinched off 1 stalk)
Salt
Pepper
Drizzle of olive oil or garlic confit oil (~¼ tsp but just eyeball it)
Instructions:
Toast your bread.
Spoon the ricotta on top and spread over the bread.
Place the tomato slices on top and add a pinch of salt and pepper.
Sprinkle the fresh oregano on top and then drizzle the olive oil over everything. Enjoy!
