Lemon Ricotta Pancakes

Ingredients:

  • Pancake mix (make your own or buy some from the store)
  • Dash of vanilla extract
  • Tablespoon of lemon juice
  • Egg
  • Β½ cup of ricotta
  • Water
  • Butter
  1. Mix all of the ingredients together except for the butter. For the water, just gradually add until the mix is the right consistency! You don’t want it to be too thin or your pancake won’t be nice and fluffy, it’ll just be soft and kind of flat.
  2. Put a bit of butter into a pan before you cook each pancake. Just pour a bit of the batter in, and flip the pancake once you see bubbles on the surface.

Optional: For a real treat, warm up the maple syrup before you pour it on your pancakes!
