Pumpkin Polenta with Whipped Honey Ricotta and Crispy Pancetta
- Pumpkin puree
- Boil water with a dash of salt and add the polenta once it comes to a boil. Keep whisking every few minutes and bring it down to a simmer once it starts thickening up.
- After it has cooked for a while and has thickened up to the consistency you like (just add more water if you like it thinner), whisk in some butter to smoothen it. Whisk in pumpkin puree as a final step!
- Top with honey ricotta, some pancetta you've fried up in a pan, and an optional egg.
Whipped honey ricotta
- Just whisk (by hand or by mixer) honey and ricotta until well mixed!
