Vermicelli and Chive "Pancake"

Ingredients:

  • Vermicelli
  • Eggs
  • Chives
  • Chinese cooking wine
  • Sesame oil
  • Soy sauce
  • Salt
  • White pepper
  • Optional: roasted garlic
  1. Cook up some vermicelli in boiling water for about 5 minutes (you don’t want the noodles to get too soft). 
  2. Chop up a bunch of chives and beat with eggs, soy sauce, sesame oil, Chinese cooking wine, salt, and white pepper. I just happened to have roasted garlic so I chopped up a few cloves and threw it in the mix, but this is totally optional. Mix in the vermicelli and get ready to fry!
  3. In a medium sized pan, pour a bit of sesame oil for each pancake and begin panfrying.

I used about 2 bundles of noodles and 6 eggs, so this made about 8-10 pancakes depending on how big you want them!
