Greek Yogurt, Orange, & Blueberry Toast

This recipe honestly came from a whim and because we had way too much Greek yogurt sitting in the fridge, but sometimes the best recipes happen that way!

We very rarely have fresh fruit in the house because we’re bad at remembering to eat it, then it goes bad, and then I feel bad wasting dollars and food all in one go. Since we had excess Greek yogurt and there were still some blueberries (we got a container the last time we were at Costco), I figured pairing them would be solid…but then I thought yogurt bowls are so boring, let’s try something new.

So this is not so new, but new to me β€” and it was tasty! For some added protein, I threw on some hemp seeds that I have on hand for those days that I DO want a yogurt bowl. They taste like nothing basically but are good for you so πŸ‘


Greek Yogurt, Orange, & Blueberry Toast

Makes 1 serving

Ingredients:

  • 1 slice of bread

  • Generous 1Β½ tbsp of Greek yogurt

  • ΒΌ cup fresh blueberries

  • Β½ tsp sugar

  • Β½ tsp hemp seeds

  • 1 tsp orange jam or syrup (I used this tasty Satsuma Syrup I found at World Market)

Instructions:

  1. Toast your slice of bread and spread the yogurt on top.

  2. Swirl in the orange jam or syrup and then top with the blueberries, hemp seeds, and sugar.
