Brownie Cookies, 2 Ways



I used this Brownie Roll-Out Cookie recipe from Smitten Kitchen and FINALLY got to use my ninja cookie cutters to make delicious treats! Along with ninjas, I baked rabbits and cats out of these delicious chocolate cookies. After the cookies were cooled off, I made little ice cream sandwiches by pressing the ice cream/sorbet into the cutter molds and then pushing them out onto the cookies.
Version #2 had royal icing made from powder sugar, milk, light corn syrup, and vanilla extract but I could only ice about 10 of the cookies before running out of icing, oops! Either way, these were delicious.
