Pumpkin Chocolate Waffle Stack
- Waffle/pancake mix
- 1/2 cup pumpkin puree
- 1 tsp vanilla extract
- Chocolate spread (I used a cocoa almond butter from Trader Joe's)
- Cooking spray
- Follow the directions on your box of waffle/pancake mix, and, instead of milk, use the pumpkin puree and vanilla extract. If the mix is too thick, add a little bit more of the puree until it is the consistency you want.
- Use cooking spray on your waffle maker so the batter doesn't stick and start making those waffles!
- As each waffle is done, spread a generous layer of chocolate on each and start stacking. I used a cocoa almond butter from Trader Joe's, but nutella or anything else you like works.
The warm waffles will make your spread melt and you'll get deliciously gooey waffle sandwiches to start your day with.
